Mini Shepherd�s Pie

�Recipe for one, or more...

An excellent way to use up bits of left-over cooked meat.
Mince or finely chop the meat.
Preheat oven to 200�C/400�F/Gas Mark 6.
Baking potato
Cooked mince
Butter
Grated cheese (optional)
Salt and pepper

Bake a jacket potato of whatever size you want.
When cooked allow to cool slightly, then cut in half lengthwise.
Scoop out the potato from the skin, leaving the skin intact.
Mash the potato with a little butter and season.
Place the cooked mince in the potato skins then cover with the mash.
Sprinkle the cheese on top.
Bake in oven for about 20 minutes until golden-topped.
Eat with whatever takes your fancy.
Minimal washing-up as you can eat the container!

Variations:
? Use �fancy� mince with cooked onion, a dash of Worcester sauce or tomato ketchup.
? Use baked beans instead of mince.
? Chopped cooked sausages and/or bacon works well.
? Left-over vegetables makes an excellent vegetarian version.
? Curried insides make a nice change; just add a small spoon of curry paste to the filling.

If you do not mind your jacket potato without a crispy outer you can do this recipe in the microwave.

For the purists � the title should only apply to minced lamb.
For the unpure, use whatever mince takes your fancy.
